Pork Shoulder with Orange Peel

1/2 tbsp olive oil
1/2 tbsp unsalted butter
1 white onion, finely diced
1 peel of orange
10 fresh sage leaves
2kg pork shoulder joint, sliced thin
1 bulb of garlic, diced
200ml cider
10ml chicken stock
1/2 tbsp dijon mustard
1 tsp of double cream
1 tbsp salt

1. Preheat the oven to 425 degrees Fahrenheit. Butter a baking dish.

2. Season the pork and place it into the dish, cooking for 40 minutes.

1 orange
1 tangerine
1 tsp diced rosemary
1 tsp whole oregano

Dressing
3 tbsp freshly squeezed orange juice
2 tsp maple syrup

1. Preheat the oven to 400 degrees and roast the beets.

2. Slice and peel all of the oranges.

3. Combine all of the ingredients and gradually add the olive oil.

4. Arrange everything on one dish, pouring the dressing over it.

 

Bleu Cheese and Grapefruit Delight

Often times, bleu cheese is relegated to a few simple uses: pair with an apple here, or a cracker there. But in this recipe, the cheese is given a new life. Serve this up for the perfect dinner appetizer or mid-afternoon snack.

Serves 1

1 tbsp butter
1 cup flour
1 cup whole milk
2 cups brown sauce
1/2 cup bleu cheese
1.5 eggs
2 slices of wholewheat bread
1 cup sugar
50ml water
2 sprigs of rosemary
3 onions, diced fine
2 grapefruits
Pepper and Salt

1. Use the saucepan to melt the butter. After cooking or 60 seconds, break up hard spots. Cook on a low temperature and continue to stir. When it is really creamy, you know it is time for the next step.

2. Nicely toast the bread and then spread the bleu cheese on it.

3. Add everything remaining to a saucepan and bring to a boil, stirring regularly.

4. When you’ve reached a boil, you’re ready to serve the dish.
